Winter Wonder: Sweet Potato, Carrot, and Prawn Delight

Comfort food cravings hit me like a snowstorm sometimes, and while I’m not a seasoned chef, I whip up something warm and cozy when the mood strikes. This dish came about on a whim for my little one, and even after a tantrum-filled day, she gobbled it up! It’s a simple recipe with endless possibilities, so here’s my basic version:

Ingredients:

  • 1 sweet potato, peeled and cubed
  • 1 carrot, chopped
  • 4 fresh tomatoes, diced
  • 1/2 onion, diced
  • Garlic, minced (to your taste)
  • Handful of fresh spinach
  • 1 Maggie cube (optional)
  • King prawns or other protein of your choice (shrimp, tofu, etc.)

Method:

  1. Prep the veggies: Peel and cube your sweet potato, chop the carrot, dice the onion and tomatoes, and wash the spinach.
  2. Sauté the base: Heat 2-3 tablespoons of vegetable oil in a pan over medium heat. Add the sweet potato and carrot, and fry gently until they start to brown slightly (don’t worry about perfection, just a little color is good). Stir occasionally.
  3. Flavor explosion: Once the veggies are looking happy, add the onion and garlic. Sauté for another minute, until fragrant.
  4. Tomato time: Toss in the diced tomatoes and cook for a few minutes, allowing them to soften and release their juices.
  5. Seasoning magic: Add a pinch of salt and pepper to taste. If you’re using the Maggie cube, crumble it in now for a savory boost (optional).
  6. Protein power: Add your chosen protein (prawns, shrimp, tofu, etc.) and cook according to its needs.
  7. Greens galore: Finally, stir in the spinach and cook until wilted.
  8. Serve and savor: Dish up your warm and comforting creation, and enjoy!

Tips and Twists:

  • Feeling adventurous? Add a pinch of turmeric or cumin for a warm, earthy flavor.
  • No fresh tomatoes? Use a can of diced tomatoes for convenience.
  • Don’t have spinach? Kale or another leafy green will work too.
  • This recipe is easily doubled or tripled to feed a crowd.
  • Get creative with your protein! Experiment with different options to find your favorite combo.
